What is Behind the Fine Aroma of Wine?

In this category, scientists chose genome of the high value variety, Tannat grape, from which some of the best wines are made.

It is from the Tannat grapes that we get the antioxidant called tannin which is thought to do wonders to health, especially in the fight against ageing. Further, wines made from Tannat grapes contain high levels of procyanidins, which is known to be good for reducing hypertension and cholesterol.

Uruguayan chemistry professor Francisco Carrau said: "A wine made with Tannat has twice the tannins of Cabernet Sauvignon, Merlot or Pinot Noir. Sequencing the grape's genome will allow vintners to protect a valuable niche in the world's USD 300 billion wine industry. Winemaking has always been an art. Today it is also a science. If we can determine through biotechnology the factors that determine a wine's aroma and color, we can potentially apply that information to create more pleasing and valuable products."

Such research and information may be the road ahead to have more successful vineyards and better wines with high value.
